Tai heo cạo sạch lông. Dùng muối và chanh chà sạch để khử hết mùi hôi. Rửa sạch tai heo lại với nước.
Ngò rí, lá bạc hà, lá sung, xà lách rửa sạch, để ráo. Tỏi bóc vỏ, băm nhỏ. Lá chanh cắt sợi, ớt cắt nhỏ.
Tai heo cho vào nồi nước, luộc đến khi sôi vặn nhỏ lửa chờ khoảng 10-13 phút tùy vào tai nhỏ hay to. Sau đó, vớt tai ra ngâm vào nước nguội khoảng 15 phút để tai không bị thâm đen.
Dùng dao sắc, cắt tai heo thành những miếng dài, mỏng.
Pha nước mắm: Hòa tan 1 muỗng cà phê đường trắng, 1/2 muỗng cà phê tiêu, tắc vắt lấy nước, 1/2 muỗng cà phê bột ngọt, 2 muỗng canh nước mắm, 2 muỗng canh nước lọc, ớt, tỏi trong chén, khuấy đều.
Trộn đều tai heo với thính gạo, lá chanh. Món này ăn kèm với xà lách, lá sung, ngò rí, lá bạc hà và nước chấm chua ngọt.
